Dessert from a vegetable? YES! This almost healthy dessert is so delicious and hearty. Ingredients: 1 pound carrots, finely grated 3.5 cups almond milk 1 tsp of cardamom powder 4 tbsp of coconut palm sugar 1 tbsp coconut oil A handful of finely chopped cashews or almonds
Directions:
1. Finely grate the carrots and put the carrots, cardamom, sugar,coconut oil, and almond milk into a heavy-bottomed saucepan. Bring to a boil and cook on medium heat, stirring occasionally, until all the liquid has evaporated. This took me about 45-50 minutes. 2. Add the cashews or almonds after turning of the heat and let it sit for a few minutes after mixing it in. I prefer it warm, however it can be eaten cold as well.
