Who says you can only use croutons to add a crunchy texture to your salad? These spicy morsels of crunchiness are filled with protein, fiber, and robust flavor. The best part? It's takes 5 minutes to mix together and the oven takes care of the rest.
I love recipes that require the oven to do most of the work, because that frees up my time to continue making other parts of the meal!
INGREDIENTS:
1 can of chickpeas (organic when possible)
2 tsp coconut oil
1 tsp curry powder
1 tsp garlic powder
1 tsp cayenne (optional)
Sea salt and black pepper, to taste
INSTRUCTIONS
Preheat oven to 400 degrees.
Mix chickpeas, oil, and spices until well coated.
Lay chickpeas out flat on a baking sheet. Bake for 20 minutes, stir the chickpeas, then bake for another 15 minutes.
Let them cool on the counter for about 10 minutes.
Enjoy them on a salad or as a crunchy snack!
These are great to bake in a big batch for the week. They can be stored in the fridge for a week
