Spicy Roasted Chickpeas

Who says you can only use croutons to add a crunchy texture to your salad? These spicy morsels of crunchiness are filled with protein, fiber, and robust flavor. The best part? It's takes 5 minutes to mix together and the oven takes care of the rest.

I love recipes that require the oven to do most of the work, because that frees up my time to continue making other parts of the meal!

INGREDIENTS:

  1. 1 can of chickpeas (organic when possible)

  2. 2 tsp coconut oil

  3. 1 tsp curry powder

  4. 1 tsp garlic powder

  5. 1 tsp cayenne (optional)

  6. Sea salt and black pepper, to taste

INSTRUCTIONS

  1. Preheat oven to 400 degrees.

  2. Mix chickpeas, oil, and spices until well coated.

  3. Lay chickpeas out flat on a baking sheet. Bake for 20 minutes, stir the chickpeas, then bake for another 15 minutes.

  4. Let them cool on the counter for about 10 minutes.

  5. Enjoy them on a salad or as a crunchy snack!

These are great to bake in a big batch for the week. They can be stored in the fridge for a week
