Crispy Polenta Fries


Baked polenta fries is one of my favorite recipes. They're easy to prep and the oven does the rest. I use it as a side dish for dinner or as a snack between meals. It has all the goodness of regular fries and is low in carbs. You can dress this up to please any palate. After they're baked, sprinkle herbs, cayenne pepper, or garlic powder to spice it up. Serve with ketchup or your favorite dipping sauce.

INGREDIENTS:

  • 1 (24-ounce) tube polenta halved and cut into 1-inch thick fries (I bought mine from Trader Joe's)

  • Coconut Oil

  • salt + pepper to taste

INSTRUCTIONS:

1. Preheat oven to 450 degrees.

2. Place polenta fries on a baking sheet. Brush both sides with coconut oil and season with salt and pepper.

3. Bake fries for 15-20, turn each wedge, bake for 10 minutes more or until crisp and golden-brown. 4. Let them cool for 2-3 minutes and serve with your ketchup or your favorite dipping sauce
