Black Bean Brownies


I know what you're thinking.

"Why would I eat brownies made from black beans?"

What if I told you there are filled with protein, good fats, and clean carbs - and are oh so delicious. That means you can have up to TWO pieces everyday! No guilt, no problem!

Plus, they are filled with the dark, rich, fudgy flavor of real brownies.

You can make these in batches and they keep well in the fridge for one week.

(Vegan, Gluten Free)

INGREDIENTS:

  • 1 15-oz can, drained and rinsed well

  • 2.5 tbsp cocoa powder

  • 1/2 cup quick oats

  • 1/4 tsp salt

  • 1/2 cup pure maple syrup or coconut palm sugar

  • 1/4 cup melted coconut oil

  • 2 tsp pure vanilla extract

  • 1/2 tsp baking soda

  • 1/2 cup chocolate chips

  • 1 tbs coconut flakes (optional)

  • 2 tbs chopped walnuts (optional)

  • 1/2 cup water (add more if needed)

INSTRUCTIONS:

1. Preheat oven to 350 F

2. Combine all ingredients except chips in a blender or food processor, and blend until completely smooth.

3. Stir in the chocolate chips, then pour into a greased 8×8 pan.

4. Sprinkle coconut flakes and walnuts on top

5. Bake for 25 min

6. Let them cool for 15 min before serving
