Protein Oatmeal Bar

Oatmeal is healthy, inexpensive, and as versatile as it gets. If decorated properly, it's a morning treat you will be excited to get out bed for. I first made this recipe at one of our Yoga & Cooking Retreats. It was such a hit, I had to share with you guys. I love this recipe because you can make a large batch and grab breakfast on the go every day. There will be no excuses to not eat a healthy, balanced breakfast to keep you full and focused until lunch. These bars contain protein, fiber, healthy fats, and lots of gooey flavor that's sure to wake up your taste buds.

INGREDIENTS

DRY:

1/2 cup coconut palm sugar

4 TBS chocolate chips

3 TBS chopped walnuts

2 tsp cinnamon

2.5 cups organic oats

1 tsp baking soda

1.5 cup chopped apples

4 TBS coconut flakes

1 pinch of sea salt

1 tbs ground flax seeds

WET:

1 TBS coconut oil, melted

1 tsp vanilla extract

1 cup dairy free milk

3/4 cup water

INSTRUCTIONS:

1. Pre heat oven to 350 and line a baking dish with coconut oil

2. Mix all the dry ingredients first in a large bowl

3. Add in all the wet ingredients and mix well.

4. Bake for approximately 25-30 minutes. Allow the bars to cool completely before cutting. Cutting the bars before they have completely cooled will cause the bars to crumble. 5. Remember to chew slowly and enjoy with love and gratitude.
