Apple Almond Crumble


During our last Yoga and Cooking Retreat at Menla Resort, the amazing staff served us a dessert so good, I nearly started crying (a bit dramatic, I know.) It was that delicious. They were kind enough to give me a list of all the ingredients. I modified it a bit to appease my tastebuds. I love coconut everything and almonds always add a strong nutty flavor - so I had to add those in! Hope you enjoy it as much as we did!

WET INGREDIENTS

5 apples thinly peeled and sliced

juice of half an orange

3 TBS maple syrup

2.5 TBS coconut oil (melted)

DRY INGREDIENTS

3/4 cup coconut shreds

1 cup rolled oats

3/4 cup plain almonds

1 TBS coconut palm sugar

2 tsp cinnamon

INSTRUCTIONS

  1. Preheat oven to 365 degreed F

  2. Blend all the dry ingredients in a blender or a food processor

  3. Peel the apples (if not organic) and thinly slice them

  4. In a bowl, mix sliced apples with maple syrup, orange juice, and 2 TBS of coconut oil

  5. Pour the apples into a baking tray that is lined with coconut oil

  6. In another bowl, toss the blend of dry ingredients with 1/2 TBS of coconut oil

  7. Sprinkle the crumble mixture on top of the apples

  8. Bake for about 40 minutes and let it cool for about 10 minutes
