Beet Hummus

Combined with veggies, this hummus is a great post workout meal or just a great anytime snack! It's so delicious, you'll definitely go for seconds.

Beets are a powerhouse of nutrients and taste oh so good when mixed with the right ingredients. Beets can be enjoyed 2-3 times a week. They are loaded with immune-boosting vitamin C, fiber, and essential minerals like potassium (essential for healthy nerve and muscle function) and manganese (great for bones, liver, kidneys, and pancreas.) It also has the following functional benefits:

1/2 cup cooked beets

1 can of chickpeas

1/4 cup water

2 cloves garlic

1.5 tbs fresh lemon juice

3 tbs EVOO

2 TBS tahini

salt to taste


1. Blend all the ingredients together in a blender and enjoy with veggies!

Hummus with will stay fresh in the fridge for up to 4 days.
