Once I discovered the secret to dairy-free cheese, I wanted to dunk everything in it. Naturally, I started with nachos. There is something so delicious about the salty and savory corn chips, hearty cooked black beans, fresh guacamole and, of course tangy cashew CHEESE!
My ideal nacho toppings are: black beans, salsa, guacamole, onion, jalapeños, cilantro, and cashew cheese. If you prefer a different combination of things, feel free to mix it up! Make these your own!
2-3 cups Tortilla Chips (Organic + I love Trader Joe’s brand)
3/4 cup Cashew-less Vegan Cashew Cheese
1 cup cooked Black Beans
1/2 cup Guacamole (1 ripe avocado + 1/4 tsp sea salt + 1 lime, juiced + 1 TBS chopped onion + 1 TBS chopped cilantro)
1 cup salsa (2 tomatoes + 1/4 red onion + 1 lime juiced + 3 TBS chopped cilantro)
Fresh Jalapeños and Onion, sliced (optional)
CASHEW CHEESE INGREDIENTS
1 cups raw cashews (soaked for at least 1 hour)
3 Tbsp nutritional yeast
1/2 tsp sea salt
2 cloves of garlic
1/2 TBS smoked paprika
1 tsp turmeric powder
1/4 cup water (add more as needed. Varies depending on which type of blender is used)
INSTRUCTIONS FOR CHEESE: Blend all ingredients together and pour over nachos
INSTRUCTIONS FOR CONSTRUCTING NACHOS:
1. Heat up black beans and add taco seasoning (adjust to personal taste). I like Trader Joe's Taco Seasoning Mix.
2. On a large plate layer:
Sprinkle desired toppings (jalapeno, onions, cilantro)
3. Enjoy with love and gratitude - and perhaps some tequila.
One misconception I'm always on a mission to debunk is that eating clean is boring and tasteless. This recipe is FULL of robust flavor and will leave your belly and heart happy. Plus it's incredibly EASY to make. The whole recipe will not take more than 25-30 minutes to construct.
