Quinoa Tabbouleh


Need a dish filled with some of the best foods for cleansing?

Quinoa is a versatile grain that adds heartiness to any meal. Containing all nine essential amino acids, quinoa is one of the most protein-rich foods we can eat. It's very high in fiber and gluten free for those who are gluten sensitive.

INGREDIENTS:

1 cup cooked quinoa (chilled)

1/2 bell pepper (chopped)

1/2 onion (chopped)

1 bunch parsley (chopped)

1 lime

1 tomato (diced)

1 tbs EEVO

sea salt to taste

(can also add cucumbers and radishes)

INSTRUCTIONS:

1. Quinoa cooking instructions: 1 cup dry of quinoa to 2 cups of water

2. Chop up all the vegetables

3. Mix all the ingredients together in a bowl and chill for 30 minutes.

4. Enjoy with love and gratitude.

This recipe is super quick and easy to make. You can make this in batches for the week and use it as meal or as a side dish. Personally, I use it on top of a bed of spinach and lettuce and add some EVOO and balsamic vinegar.
