Peanut Butter Chocolate Mousse

Avocados and chocolate are literally two of my favorite foods. I have been making this dessert for years, and I'm not sure why it took me so long to share it with you guys!

Avocados have more potassium than bananas and are an alkaline food (think decreasing inflammation.) They are also loaded with good fats and fiber to help keep you fuller longer.

And if you really need more reasons to eat cacao (the plant chocolate comes from), it's also an aphrodisiac, helps balance hormones, and is high in antioxidants. So enjoy this rich and creamy dessert till the very last bite - because it's really good for you!

INGREDIENTS:

2 ripe avocados

1/2 cup unsweetened cacao powder (raw, organic cacao is best)

1/2 cup salted creamy or crunchy peanut butter

1/2 cup sweetener of choice maple syrup or honey (if not vegan)

1/4 cup coconut milk or other non-dairy milk

2 tsp vanilla extract

Berries of choice for topping

INSTRUCTIONS:

1. Place all the ingredients in a blender or a food processor.

2. Blend until the texture is creamy.

3. Divide into 4 serving cups and chill them in the fridge for about 1 hour.

4. Leftovers will stay well in the fridge for up to 3 days.
